docs(papers): cite the remaining named data sources and baselines - #91

Completes the verified-citations pass: Tashkeela corpus cite in the Arabic data section (Zerrouki and Balla, Data in Brief 11:147-151, 2017 - the corpus Sadeed itself derives its dataset from), and the umbrella results table's Persian and Urdu reference baselines (Homo-GE2PE = Qharabagh et al., arXiv:2505.12973; Epitran = Mortensen, Dalmia and Littell, LREC 2018). All three verified against the source before entry. Both trees compile clean: 0 errors, no undefined citations.
