Adds --no-inference-columns to keep selected IDs and codes as text while other columns retain normal type inference. It accepts column names, indices and ranges, including --zero, across the eight commands that infer types.

The existing -I / --no-inference flag and all-text streaming paths keep their behavior. The global and selective options cannot be combined. Help text, examples and the changelog are updated.

Closes #151.

Checked on Windows with Python 3.12: 394 tests pass, plus flake8, isort --check-only and check-manifest. Tests cover reordered join headers, CSV/NDJSON/XLSX input, null handling and legacy flags. New selective-inference tests fail on the unchanged base. Other platforms and Python versions were not run locally.
