Linux runs every supported Node major, including current (26) to flag upcoming-LTS regressions early. macOS/Windows cover the engines floor and current LTS only; Node 22 stays Linux-only. Dogfood now also runs on Windows for path-handling regressions (separators, case, CRLF) Linux would never surface.
Branch protection now requires `Test` and `Dogfood` instead of each matrix leg. The summaries run with `if: always()`, check every matrix result is `success`, and fail otherwise, so adding or removing a Node/OS leg doesn't touch the ruleset. The publish job gates on the summaries for the same reason.
