fix(swift-example-app): expose locked outpoints in storage explorer

Fix

Follow-up for #5113, targeting its branch rather than unrelated base-branch code. The new PersistentLockedOutpoint SwiftData model was absent from the Storage Explorer index, list, and detail views. Add all three, scope directly by the persisted network, and display the stored wallet/outpoint without requiring a TXO relationship.

Verification

• scripts/check-storage-explorer.sh: all 37 model types covered.
• git diff --check: pass.
• No persistence schema, wallet lock behavior, or coverage gate weakened.
• Native Xcode compilation remains pending; this fixes the observed coverage check, not a claim that the whole PR is green.
