chore(use-cases): reorganize conversational agent samples

Move data-analyst-conversational-assistant under 01-conversational-agents to match the category structure, updating the references that hardcoded the old repo-root path: amplify.yml appRoot (Amplify Hosting builds would fail), the frontend README's AMPLIFY_MONOREPO_APP_ROOT value. Remove video-games-sales-assistant, along with its two index table rows and two .gitignore patterns that pointed at its pre-restructure path.

Note: This is a pure git mv. GitHub doesn't pair all 94 renames, so relocated files may show as deletions with separate additions at the new path. Verified that all 94 files are present at the new location with identical content — the only content changes are amplify.yml's appRoot and the frontend README's AMPLIFY_MONOREPO_APP_ROOT. The only real deletions are video-games-sales-assistant.
