Prepare v1.6.2 with the fixes and operator improvements merged since v1.6.1. Bump the main Helm chart to 0.4.5 and processor charts to 0.1.2, align their application versions and the Iceberg processor's platform dependency/build pin, and update the broker image example.
Release notes cover parallel restore, ListOffsets errors, image and affinity overrides, restricted pod security, proxy/MCP publishing, and the required CRD and existing-volume upgrade steps.
Validation:
make commit-check(Go/race, nested modules, SDKs, fuzz and CodeQL); lint, render and package all four Helm charts. The v1.6.2 tag will be pushed after this PR is approved and merged; its workflow publishes all eight images for amd64/arm64 and creates the GitHub release.
