Update unreleased notes and packaged-app validation - #53

The unreleased notes stopped before the latest routing, engine settings and model-download work. Summarize the merged changes and the upgrade requirements while retaining the existing entries and release boundaries. Record the owner's packaged source-build validation with its untested cases and follow-ups, and put user-facing limitations in known issues. Description
Bring Unreleased up to date for fork PRs 38–52, including upgrade guidance for verified peers and saved manual-node intent. Preserve the existing entries and keep released notes separate. Record the owner's packaged source-build validation and its limits without treating it as certification of a published artifact.
Scope
CHANGELOG.md: upgrade notes, Security, Changed, Fixed and Added entries.docs/release-readiness.mdx: dated validation method, observed results, untested cases and follow-ups; one deferred-engine decision.docs/known-issues.mdx: roaming peer addresses, stale oMLX launchers and the unpinned Ollama install download.Documentation only. No runtime, dependency, generated-contract or version changes. Desktop 0.9.0 / product 2.7.0 and renaming Unreleased belong to the separate release-preparation PR. CI/test-only changes are intentionally omitted from the changelog.
Validation
On macOS arm64, in an isolated worktree with its own installed dependencies (no node_modules symlink):

Documentation accuracy and classification only. The upgrade note calls out the behavior and saved-entry migration that users must account for; new JSON-RPC surfaces remain additive and relay protocol stays v2. The dated validation applies only to the specified source build on the owner's Macs, not a release asset or another platform.
