Hitch OSP build issue

The hitch port has an issue with not including wolfSSL configuration before using wolfSSL headers:

This issue was exposed after wolfSSL PR wolfSSL/wolfssl#8262

Status update: tracked via #325 (approved, mergeable, clean) and wolfSSL/wolfssl#9897 (the wolfSSL-core companion, which explicitly marks Fixes wolfSSL/osp#218).

#9897 is currently CHANGES_REQUESTED on a small request from @julek-wolfssl to use matrix.ref instead of hardcoding the hitch version in .github/workflows/hitch.yml. Once that lands, #325 can merge and this can close.
