Subject: [PATCH] feat(fish): default GENTLE_AI_CHANNEL to beta on every host

Hosts set the channel in ad hoc conf.d files and disagreed (beta on three,
stable on the rest). gs sync installs from main, so 10-core.fish now
defaults every host to beta; 99-local.fish can still override.
